Team from Delia Foley’s Opening New Restaurant at the Former Bluegrass Tavern

Delia Foley’s and Smaltimore owners Andrew Carter and Jesse Selke are taking over the former 3,400 sq. ft. Bluegrass Tavern space at 1500 S. Hanover St. in South Baltimore. Bluegrass closed its doors in February.

The yet-to-be-named restaurant from Andrew Carter and Jesse Selke will focus on “new American cuisine” and “upscale pub food.” The new restaurant will be a change of pace for the duo as Delia Foley’s and Smaltimore are more bar-focused establishments. “We are excited to tackle the food aspect of the business and diversify our portfolio,” said Carter.

This opportunity came to be for the business partners and longtime friends as they were looking for a third location, ideally in South Baltimore. “We are really excited about the growing Federal Hill and South Baltimore neighborhood,” said Carter, who recently purchased a home in the neighborhood as well.

Carter and Selke took notice to the amount of high-end restaurants that have recently closed in South Baltimore including Regi’s Bistro, Bluegrass, Metropolitan, Rachel, and In Bloom. They’re hoping to bring another quality dining establishment to the area and sway people from leaving the neighborhood for places like Harbor East for a great meal.

Carter and Selke don’t want this new restaurant just to be focused on dining, however, so they are also putting a big focus on the bar. They are adding new draft lines so that it can serve 10 beers on tap at once. Many of these beers will be from Maryland. The restaurant will also be serving wine and cocktails on tap.

The space has a bar area on the first and second floor, and dining rooms on both levels. The second story will also be available for private events.

Carter and Selke are performing a cosmetic renovation of the restaurant space that will seat 90. The renovation includes new tables, bench seating, a mural, white-washed brick behind the bar, and the addition of a raw oyster bar. Carter described the vibe as “rustic chic.” The space also has a brick outdoor patio.

The menu will focus on appetizers and sharing plates, oysters, classic sandwiches, and “moderately” priced entrees that will range from about $18 to $24. Carter said there will be some Baltimore favorites like crab cakes and some classics like steak frites. The restaurant also has a sous vide cooker that slow cooks meats in a sealed bag in water for 24 to 36 hours.

Carter said the entire menu will be “good mood food.”  They are in the process of hiring a chef to run the kitchen.

Carter and and Selke’s primary focus is to attract diners from the neighborhood, but are also looking into adding valet.

The new restaurant will be open every night for dinner and on Saturday and Sunday for brunch. It will likely also be open for lunch on Friday, Saturday, and Sunday.

The restaurant is scheduled to open around September 15th.

Carter said he sees this new restaurant as a date night spot, but also a place to get a drink, hang out, and enjoy some upscale pub food.

Carter and Selke plan on buying the building in the next few years.
